Chicken Dumpling Soup with Bok-Choy and Mushrooms

Ingredients (serves 4)

1 packet 250 grams  Angel Hair SlimPasta
1 ½ litres chicken/ vegetable stock
2 cloves garlic grated
5 cm piece ginger grated
1 small bunch bok- choy washed and   chopped
2 small mushrooms  sliced thinly

- Dumplings
250 grams chicken mince
2 cloves of   garlic grated
3 spring onions thinly sliced
1 teaspoon sesame oil
5cm piece ginger grated
¼ bunch washed and finely chopped coriander

1.  Place stock in pot with grated ginger and garlic
2. Place chicken mince, grated garlic, spring onion, grated ginger, sesame oil  in bowl mix until all ingredients are combined. Form one tablespoon mixture into balls (dumplings)
3.  Prepare SlimPasta Angel Hair as per instructions on pack using kitchen scissor cut into smaller lengths
4.  Bring stock to a boil and gently add chicken dumplings
5. Cook dumplings for 5 -6 minutes or until they begin to rise to top
6.  Add bok- choy , mushroom to pot and cook for a minute
7.  Ladle soup into bowls garnish with extra coriander

You can also:

-Add  fresh chilli
-Add broccoli , or Choy- sum if you prefer more vegetables
