SlimPasta Spaghetti and Meatballs

vol 20 small
Ingredients (serves 2)

1 Packet SlimPasta Spaghetti
1 small onion diced
1 clove of garlic crushed
1 small carrot thinly sliced
½ cup of diced red capsicum
1 jar of tomato cooking sauce
Meatballs
300 grams of lean beef mince (makes approx. 8 meatballs)
2 cloves of garlic grated
1 small onion grated
1 small bunch of parsley finely chopped
1 tablespoon  of grated parmesan cheese
Salt and pepper to season

1. Prepare SlimPasta as per instructions on pack
2. Add ½ cup of water to pan add onion, garlic, carrot and capsicum to pan cook for 1 -2minutes
3.Add  jar of tomato cooking sauce , turn down heat and simmer
4.Combine meat , garlic, onion ,parmesan cheese ,parsley, salt and pepper  in bowl
5. Mix well to combine. Form tablespoonful of mixture into balls.
6. Gently add meatballs to simmering sauce, cook for 1-2 minutes each side, Use 2 spoons to gentle turn meatballs over, further cook for 1-2 minutes
7. Add meatballs and sauce to prepared SlimPasta Spaghetti
8.Garnish with extra parsley and serve

You can also:

- Use turkey mince as a leaner option to beef mince
– Add extra vegetables to the sauce such as celery, mushrooms and zucchinis
