Spinach, Bacon and Ricotta Spaghetti

Ingredients (serves 2)

 

1 packet SlimPasta Spaghetti

2 cloves of garlic crushed

100 grams washed baby spinach

125 grams low fat ricotta cheese

60 grams lean shortcut bacon diced

black pepper

1 teaspoon olive oil

1 teaspoon  grated parmesan cheese

 

1. Prepare SlimPasta Spaghettis as per instructions on pack

2. Add oil to pan and heat, add bacon and cook on low heat until crispy

3. Add garlic cloves and cook until softened , add baby spinach to pan

4. Place SlimPasta and low fat ricotta. Toss to coat SlimPasta in ricotta and spinach

5. Season with black pepper and parmesan cheese

 

You can also:

- Add blanched asparagus  for extra vegetables

- Substitute bacon with 250 grams diced chicken breast
