Thai Mussels with Sesame Bok-Choy

Ingredients (serves 2)

 

1 packet SlimPasta AngelHair

2 cloves of garlic

5 cm piece fresh turmeric

½ a large peeled brown onion

½ bunch coriander leaves

10 cm piece ginger

1 teaspoon vegetable oil

1  long red chilli

1 stalk lemon grass(White part only require)

300 grams fresh mussels de- bearded and scrubbed clean

1 cup of white wine/Chicken stock

1 bunch bok –choy

2 teaspoons sesame oil

1 teaspoon brown sugar

Sesame seeds, coriander and red chilli to garnish

 

1. Prepare SlimPasta AngelHair as per instructions on pack

2. Add 1 teaspoon oil to pan and heat, add clean mussel to pan and stir fry

3. Add garlic cloves, lemongrass, ginger, brown onion coriander and 1 chilli to blender or mortar and pestle and make a paste.

4. Add white wine and brown sugar to mussels in pan  , reduce heat and allow mussels to cook

5. Add spice mixture to pan and toss through to coat mussels evenly

6. Add AngelHair to pan and toss through to heat AngelHair

7. In another pan spray with oil spray add bok-choy and toss quickly  to cook

8. Remove mussels from pan garnish with fresh chilli and coriander

9. Remove pan with bok-choy from heat add sesame oil and black sesame seeds

10. Garnish with extra coriander and fresh red chilli

 

You can also:

- Substitute mussels for prawns or chicken

- Season with lime juice for authentic Thai flavours.
